Coconut and Strawberry Ice Cream Terrine

Summer is nearly over. Of course when you have kids, summer is measured by “summer” break as dictated by the school and not by the seasonal calendar. We have less than two weeks of break left. Seriously, Matt and I are so bummed about it. Sure, we like routine and structure, but we’ll miss the boys and the daily poolside fun. So for this last weekend hoorah, that also coincides with Labor Day, I’ll be making this ice cream terrine for our goodbye-summer-break pool party.

To start this recipe, you’ll need to pick up two boxes of Fruttare’s ® Coconut and Milk Bars, along with two Strawberry Fresa boxes. For the add-in fruit, use what you prefer. I chose raspberries (frozen works better for this recipe).

And sure, I could have picked up my Fruttare®  fruit and juice bars anywhere, but I teamed up with Safeway (Vons and Pavillions here in SoCal) to develop this recipe for a fast and easy Summer Entertaining recipe. It worked out great for me, because Safeway is not only my grocery store of choice, but it so happens to be located in our town center, which is in walking distance. Now once you’ve picked up the ingredients, you can see it takes less than ten minutes to assemble this ice cream terrine. The hardest part will be waiting for it to freeze to a ready-state for slicing. So while I was waiting, I went back to the Safeway, because I forgot butter for another recipe.While I was there for that, I ended up checking out with that and five bags of filled with various nuts and loose tea from the bulk bins. A new addition to our store that I absolutely love!

Coconut and Strawberry Ice Cream Terrine

Ingredients:

  • 2 boxes Fruttare® Coconut Milk Bars
  • 2 boxes Fruttare® Strawberry Fresa Bars
  • 12 oz. frozen raspberries

Directions:

Preparation: Line a 9×5 loaf pan with plastic wrap, making sure there is at least a two inch overhang on each side.

  1. Break up 4 dessert bars of each flavor and press into pan. Sprinkle raspberries on top. Continue to layer like this until all ingredients are used. Fold plastic wrap over top and press down to fill any gaps. Place in freezer until frozen solid, about 2-4 hours (time will depend on freezer setting and how full your freezer is).
